This beautiful freshly stone-milled heirloom wheat flour is a combination of Red Fife and Park varieties. It, along with ALL of Gold Forest Grains products are non-GMO. Many customers with wheat digestion issues that happily report that these older varieties do not bother them, which is very interesting. Growing this wheat in prime organic soil conditions under sunny Alberta skies gives them a high protein content and falling number. This is the perfect wheat for sourdough and yeast bread baking projects. Can also be used as an all-purpose flour.
